In spite of his humble beginnings and hardships, Andrea Rosabianco and his family extended their hospitality to family and friends in "lo sirito de famiglia." Liege waffles were first created for the Bishop-Prince of Liege, Belgium in the mid 1800s. The prince was delighted with this new creation and it rapidly became a favorite of nobles and peasants alike. The yeast-raised dough contains pearl sugar made from beets. During the baking process small pieces of this pearl sugar caramelizes and form a delightfully sweet, slightly crunchy coating on the outside of the waffle.
