Oysters Abound in Fairfield County!

Love ‘em or hate ’em, there’s no in-between. What was once a staple among the working class of early cultures has become a delicacy of the well-to-do. Savory, briny, slippery oysters can be enjoyed so many ways – fried, ala that Rockefeller fella, in chowders and stews, or what many aficionados insist is the best: freshly shucked, resting in their shells on a bed of ice, with a touch of cocktail sauce, a squeeze of lemon, and maybe a dash of vinegar, horseradish, mignonette, or hot sauce.
